Smoky Sausage Casserole

A classic winter one-pot, with hearty deep flavors and textures topped with crunchy breadcrumbs for an end-of-the-bite delight.

Smoky Sausage Casserole
Ingredients for casserole:
Olive oil - as needed
Onions - 1 (finely chopped)
Garlic - 1 clove (crushed)
Celery - 1 stalk (finely chopped)
Red bell pepper - 2 (cut into chunks)
Sausages - 14 oz.
Ground cumin - 1/2 tsp.
Chili flakes - 1/2 tsp.
Crushed tomatoes - 2 (14-oz.) cans
Cannellini beans - 1 (14-oz.) can (drained)
Spinach - 9 oz. (fresh or frozen)
Breadcrumbs - 2 tbsp.
Method of preparing the casserole:
  1. Put the oil in a large, heatproof casserole dish over medium heat and add the onion, cooking for 5 mins until starting to soften.
  2. Add in the garlic, celery and peppers, and give everything a good stir. Cook for 5 mins more.
  3. Turn the heat to high and add the sausages. Cook for a few minutes until browned all over, then reduce the heat to medium, sprinkle in the spices and season well.
  4. Pour over the tomatoes and bring to a simmer. Cover and continue simmering gently for 40 mins, stirring every now and then.
  5. Heat the grill to high and uncover the casserole. Add the beans and spinach, and stir to warm through. Scatter over the breadcrumbs and grill for 2-3 mins until golden and crisp.
