Beetroot, Kale, and Goat Cheese Pizza

This pizza swaps the classic tomato sauce with a rich beetroot sauce, upgrades the parmesan cheese with mild goat feta, and combines all these oddities with kale – a super green. Who ever said pizza is junk food? We suggest our recipe for pizza dough instead of the store-bought option.

Beetroot, Kale, and Goat Cheese Pizza
Ingredients for beetroot sauce:
Beets - 1 cup (finely chopped)
Walnuts - 1/2 cup (crushed)
Parmesan cheese - 1/2 cup (grated)
Garlic - 3 cloves
Lemon juice - 3 tbsp.
Salt - as needed
Olive oil - 1/2 cup
Ingredients for pizza:
Pizza dough - as needed
Kale - 2 cups (finely chopped)
Mozzarella - 1 1/2 cups
Feta cheese - 1 1/5 oz. (goat feta is best)
Method of preparing the beetroot sauce:
  1. Preheat the oven to 375°F (190°C). Place the beetroot chops in tin foil and wrap them (to prevent burning).
  2. Bake the wrapped beetroot for 50 minutes, or until the beetroot softens and juice starts pouring out.
  3. Remove the beetroots and blend all the ingredients.
Method of preparing the pizza:
  1. Raise the oven's heat to 400°F (200°C). Flatten the dough on a floured surface into a circular shape, and bake the dough as-is for 5-7 minutes.
  2. Remove the dough from the oven and apply the beetroot sauce, add the chopped kale, and sprinkle the feta cheese and mozzarella.
  3. Re-place the dough into the oven and bake for another 10-20 minutes, until the dough is golden, and the cheese fully melts. Remove from the oven, let it cool for 3 minutes and enjoy.
Chef's Tip:
Some larger kale leaves have a thick white stem running in their middle. Cut it away for a milder texture.
