Asparagus Soup

Asparagus is low in calories and is a terrific source of nutrients such as fiber, folate, and vitamins A, C, and K. Asparagus also helps in improving digestion and lowering blood pressure. The super-green and super-tasty asparagus soup is easy to make and can be enjoyed even by those who don’t like eating this vegetable.

Asparagus Soup
Ingredients:
Asparagus - 1 Ibs.
Butter - 2 tbsp. (or extra virgin olive oil)
Onion - 1 (chopped)
Garlic powder - a dash
1% milk - 1 cup
White pepper - 1 dash
Vegetable broth - 2 cups
Method of Preparation:
  1. In a medium pot, sauté the onions in the butter until tender and translucent.
  2. Add asparagus, vegetable broth, garlic powder, and white pepper.
  3. Cover and simmer for 10 to 12 minutes. 
  4. Using a blender wand, blend everything until smooth.
  5. Stir in milk and remove from heat. Let cool. Refrigerate for an hour before serving. 
Chef's Tip:
You can add herbs such as lemon balm bay leaf or thyme instead of peppers if you want to reduce the sodium content.
