Pea and Mint Soup

This is possibly the easiest soup you can make. It’s simple and refreshing and the combination of fresh peas and mints blends wonderfully well to create a flavorful aroma.

Pea and Mint Soup
Ingredients:
Shelled fresh peas - 5 cups or 750 g. (if frozen, thawed)
Fresh mint - handful (chopped)
Cream - to serve
Method of Preparation:
  1. Boil 3 1/2 cups water. Once boiling remove from the flame and insert the beans.
  2. Add the mint and the vegetable bouillon powder to the mix.
  3. Blend the ingredients thoroughly until you get a smooth mixture. Let it chill.
  4. Sprinkle some chopped mint and a dollop of cream, and serve.
Chef's Tip:
For a dairy-free version, ditch the cream topping.
