Tomato Soup with Parmesan Toast

Who doesn't love a hot bowl of tomato soup? It's the ultimate comfort food for many and today we have a tomato soup recipe for you with a slight twist. This chunky tomato soup, sided with toasted bread and cheese becomes a satisfying meal for every occasion.

Ingredients for Tomato Soup with Parmesan Toast:
Olive oil - 2 tsp.
Onions - 2 cups (chopped)
Fennel - 2 cups (chopped)
Garlic - 2 cloves (minced)
Vegetable broth - 4 cups
Canned diced tomatoes - 1 (28-oz) can (don't drain)
Thyme - 1 sprig
Salt - 1/4 tsp.
Ground black pepper - 1/4 tsp.
Baguette - 1 (6 diagonally cut slices)
Parmesan cheese - 6 tbsp. (shredded)
Method of preparing the Tomato Soup with Parmesan Toast:
  1. Heat oil in a large pot over medium-high heat. Add onion to the pot, and sauté 3 for minutes. 
  2. Add fennel, and sauté for 3 minutes. Add garlic, and sauté for 5 minutes or until vegetables are tender. Add broth, tomatoes, and thyme to pot, then bring to a boil.
  3. Partially cover, reduce heat, and simmer for 35 minutes. Remove pot from heat, and allow it to cool for 5 minutes. Discard the thyme sprig, and place half of the tomato mixture into a blender. 
  4. Remove center piece of blender lid (to allow steam to escape), and then secure lid onto blender. Place a clean towel over opening of blender lid (to avoid splatters). 
  5. Blend until almost smooth, and then pour into a large bowl. Repeat procedure with remaining tomato mixture. Stir in salt and pepper, and keep warm. Preheat broiler.
  6. Place bread slices on a baking sheet. Sprinkle 1 tbsp cheese on each. Broil for 2 minutes or until cheese melts.
