Oat Soup

Oats provide a range of health benefits - from lowering blood sugar levels to promoting healthy bacteria in your gut. This soup also contains tomato, garlic, and cilantro. It's delicious and keeps you filled for a while.

Ingredients for Oat Soup:
Olive oil - 3 tbsp.
Oats - 1 cup
Tomatoes - 5 large (halved and sliced)
Onions - 1/3 cup (chopped)
Garlic - 1 clove (chopped)
Water - 3 cups (divided)
Cilantro - 1/2 bunch (fresh)
Salt - 1/2 tsp.
Method of preparing the Oat Soup:
  1. Heat a large deep skillet over medium-low heat. Pour the olive oil and let it heat up. Now add the oats. Cook and stir until nicely toasted.
  2. Add the tomatoes, onion, garlic, 1 cup of water, and cilantro in a blender. Blend for 1 minute or until smooth. Now pour the contents into the pan with the toasted oats.
  3. Stir in the remaining 2 cups of water and bring to a boil. Mix in the chicken bouillon and salt. Cover and simmer for 15 minutes. Serve warm.
