Pizzadillas

Wouldn't it be cool to combine your two favorite comfort foods: pizza and quesadillas? Turns out, you can. This special dish is called "Pizzadillas" and it gives you the pleasure of pizza and quesadillas in one wholesome and crunchy bite. It's fast and easy to make and absolutely perfect for dipping in pizza sauce!

Ingredients for Pizzadillas:
Flour tortillas - 6 (10-inch)
Mozzarella - 2 cups (shredded)
Pepperoni - 30 slices
Red onion - 1/2
Black olives - 1 can (sliced)
Mushrooms - as needed
Pizza sauce - as needed
Method of preparing the Pizzadillas:
  1. Slice all vegetables. Measure 1/3 cup of shredded cheese for each pizzadilla. Sprinkle half of the cheese over one half of the tortilla. Add toppings and then sprinkle the rest of the cheese on top. Fold the empty side of the tortilla over the toppings.
  2. In a prewarmed skillet, place the pizzadilla over medium heat and cook until its brown and crispy on the bottom. Flip the pizzadilla carefully over and cook until it's brown and crispy on the second side.
  3. After both sides are crisp and the cheese is melted inside, use a pizza cutter to cut the pizzadilla.
