Quick Avocado Pasta

Avocado pasta has a lot going for it: kids love it, it's delicious, and it's healthy too. Best of all, this recipe takes merely 15 minutes to cook. You can make this pasta even healthier if you use whole wheat spaghetti, but keep in mind that whole wheat spaghetti takes a few minutes more to cook.

Quick Avocado Pasta
Ingredients for Quick Avocado Pasta:
Spaghetti - 16 oz.
Ripe avocados - 3 (peeled and pitted)
Cherry tomatoes - 1 cup (cut in half)
Basil leaves - 1/2 cup
Olive oil - 1/3 cup
Lemon juice - 1 1/2 tbsp.
Garlic - 3 cloves (peeled)
Salt and Pepper - to taste
Method of preparing the Quick Avocado Pasta:
  1. Cook the spaghetti according to the manufacturer's directions until it's al dente. Strain the pasta and set it aside to cool slightly while you are preparing the sauce.
  2. In a food processor, pulse together the avocados, basil leaves, lemon juice, and garlic until a thick sauce forms. Season with salt and pepper.
  3. Start gradually adding the olive oil to the avocado sauce and continue running the food processor for another 20 seconds until the sauce is creamy and smooth.
  4. Mix the avocado sauce into the spaghetti and garnish with cherry tomatoes. Serve fresh!
