One Pot Creamy Mushroom Pasta

On those busy nights, when we are tired all we want is a quick and satisfying meal. Here is a perfect dish for those occasions. This creamy mushroom pasta can be easily made in one pot. It's super-rich and is the perfect comfort meal at the end of a tiring day. Make sure you have some garlic bread to serve on the side.

One Pot Creamy Mushroom Pasta
Ingredients for One Pot Creamy Mushroom Pasta:
Butter - 2 tbsp.
Garlic - 4 cloves (minced)
Baby bella mushrooms - 8 oz. (sliced)
Salt and pepper - to taste
Vegetable broth - 2 1/2 cups
Heavy cream - 1/3 cup
Parmesan cheese - 1/4 cup (grated)
Method of preparing the One Pot Creamy Mushroom Pasta:
  1. In a deep skillet, add the butter and garlic and sauté over medium heat for about 1 minute. Next, add the sliced mushrooms, salt, and pepper, and continue stirring until the mushrooms have softened.
  2. Add the vegetable broth and the fettuccine to the skillet and stir. Cover the skillet with a lid and turn the heat up to medium-high. Let the broth come up to a boil. Stir frequently. Once boiling, turn the heat down to medium-low.
  3. Allow the pasta to simmer in the broth for about 10 minutes. Keep stirring from time to time.
  4. Now add the heavy cream to the skillet and stir. After turning the heat off add the Parmesan and keep stirring until the cheese melts. Fix the seasonings if needed and serve.
