Watermelon, Radish and Avocado Salad

Watermelon is an amazing summer fruit that also works wonderfully well in fresh salads. Pair it with radish, avocado, and shallots, and you have yourself a wholesome and healthy meal for lunch. This recipe is colorful, refreshing, and fun to eat.

Ingredients for Watermelon, Radish and Avocado Salad:
Watermelon - 1 lb. (cubed)
Radish - 4-5 (very thinly sliced)
Shallot - 1 large (thinly sliced)
Olive oil - 4 tbsp.
White wine vinegar - 1 tbsp. (or champagne)
Kosher salt - to taste
Black pepper - to taste
Baby arugula - 4 cups
Avocado - 2 (peeled and diced)
Fresh mint leaves - 1/3 cup (or basil leaves)
Method of preparing the Watermelon, Radish and Avocado Salad:
  1. In a large serving bowl, add the watermelon, radishes and shallots. Then, whisk together the olive oil, vinegar, 1/2 tsp salt and 1/4 tsp black pepper in a small bowl.
  2. Now pour half of the dressing over the watermelon, radishes and shallots. Toss well. Add the arugula, the avocado and the rest of the dressing. Toss gently. Top with fresh basil or mint leaves. Season with more salt and pepper to taste. Serve fresh.
Chef's Tip:
Watermelon has high water content and will begin to release its juices the moment the dressing is added. Therefore, wait to dress the salad until just before serving.
