They are full of iron as well as vitamin A and vitamin C, thanks to crispy onions, fresh tomatoes, juicy cucumbers, and spinach.

This vegetarian pita recipe is an easy-to-make lunch that you must try this summer. Yes, these pitas taste best during summers as that's when tomatoes and cucumbers are in season and most flavorful.

Ingredients for Vegetarian Greek Pitas:
Cucumbers - 1 (small)
Cherry tomatoes - 1 cup
Red onion - 1/2
Feta cheese - 3.5 oz. (low fat)
Pita - 4 (preferably wholegrain)
Spinach - 1 handful
Lemon - 1/2 (juiced)
Oregano - 1 tbsp. (fresh)
Red pepper flakes - 1 tsp. (dried cayenne also goes really well)
Salt - to taste
Olive oil - 1 tbsp.
Red wine vinegar - 1 tbsp. (balsamic vinegar or any you have will also work)
Hummus - 4 tbsp. (to spread)
Method of preparing the Vegetarian Greek Pitas:
  1. Chop the cucumber, tomatoes, onion, and cheese, and toss them in a bowl. Next, add the spinach to the mix.
  2. In a separate bowl, squeeze in the lemon, olive oil and vinegar. Then, add the oregano, pepper and salt. Toss well. Toast the pitas and spread the hummus inside. Now add the vegetable filling. Enjoy!
