Chewy Peanut Butter Breakfast Bars

They're sweet, chewy, and filled with healthy nutrients. Kids love these granola breakfast bars, and adults do too! Best of all, this recipe requires no baking and can be ready in under 2 hours.

Chewy Peanut Butter Breakfast Bars
Ingredients for Peanut Butter Breakfast Bars:
Peanut Butter - 3/4 cup
Neutral oil - 2 tbsp.
Honey - 1/2 cup
Salt - 1/2 tsp.
Vanilla Extract - 1 tsp.
Rolled Oats - 2 1/4 cups
Sliced almonds - 1 cup
Chocolate chips - 1/2 cup (optional, chilled)
Method of preparing the Peanut Butter Breakfast Bars:
  1. Line a small square baking dish with baking paper.
  2. In a medium microwave-safe bowl, combine the peanut butter, oil, and honey, and process on medium for 1-2 minutes, stirring occasionally until the sauce just starts to bubble. Take it out of the microwave oven and stir once more until smooth.
  3. Add the salt and vanilla extract to the peanut butter mixture, then stir until incorporated.
  4. In a large bowl, combine the rolled oats, sliced almonds, and the peanut butter sauce. Mix everything until the nuts and oats are completely coated. Then fold in the chocolate chips, if using.
  5. Transfer the granola mixture to the prepared baking sheet. Spread the granola evenly across the pan and then press it firmly into the pan until it's nice and packed. Cover with a lid or plastic wrap, and refrigerate the granola bars for 1 hour or overnight.
  6. Carefully lift the corners of the baking paper and transfer the bars together with the paper to a cutting board. Cut the granola mixture into 12 bars, and you're done. You can serve these granola bars immediately or keep them in the fridge for 3-5 days.
Chef's Tip:
You can replace the honey with golden syrup, maple, or agave.
