Orange Chicken Salad

Immunize your body during the cold season with this protein, mineral and vitamin C salad. We are big fans of the chicken-orange couple as their flavors complement each other so well. Plus, what's not to like about a chicken salad? It's quick, easy, low-fat and full of protein. We think our roasted butter croutons will make a perfect topping for this one.

Orange Chicken Salad
Ingredients for salad dressing:
White wine vinegar - 1 tbsp.
Orange juice - 1 tbsp.
Salt and Pepper - as needed
Sumac - as needed (optional)
Olive oil - 4 tbsp.
Ingredients for chicken salad:
Romaine lettuce - 1 bag (or any other salad leaf base)
Red onion - 1/4
Orange - 1
Butter - as needed
Chicken breast - 2 cutlets
Salt and Pepper - as needed
Garlic powder - as needed
Croutons - as needed
Method of preparing the chicken salad:
  1. Wash and chop the lettuce. Slice the onion. Peel and slice the orange into discs, cutting away the extra white peel.
  2. Butter a skillet over medium-high heat. Season the chicken to your liking and grill it on each side for 3-5 minutes. Allow cooling before cutting into strips.
  3. Dress and serve!
Chef's Tip:
For an extra kick of protein, add some beans of your choosing. For a gluten-free meal, skip the croutons.
