Veggie Pita

Packing some veggies and hummus in pitas can make for a wholesome lunch or snack. This recipe uses veggies like bulb fennel, fresh dill, and shallot. This is an easy and unique meal that you can make at home and serve to your guests.

Ingredients for Veggie Pita:
Olive oil - 1/4 cup
Sherry vinegar - 2 tbsp.
Kosher salt - 1/2 tsp.
Black pepper - 1/2 tsp.
Fennel - 1 (halved and very thinly sliced)
Chickpeas (garbanzo beans) - 1 (15-oz) can (rinsed)
Jarred roasted red pepper - 1 jar (finely chopped)
Pitted kalamata olives - 1/4 cup (chopped)
Dill - 1/3 cup (chopped)
Shallot - 1/2 (small) (finely chopped)
Hummus - 3/4 cup
Method of preparing the Veggie Pita:
  1. whisk oil, sherry vinegar, salt and pepper in a large bowl. Mix fennel, garbanzo beans, roasted red pepper, olives, dill, and shallot. Toss to coat.
  2. Cut 1/2 inch off each pita and spread hummus inside each. Divide the filling among pitas.
  3. Serve with your choice of pickels on the side.
