Tomato-Eggplant Tartines

Today we have for you an irresistible snack. It consists of smoky eggplants, tart tomatoes, and rustic Italian bread. This crunchy snack is healthy and can be easily prepared at home. Have it in the evening when you are in the mood for something light and different.

Ingredients for Tomato-Eggplant Tartines:
Rustic Italian bread - 8 thick slices
Garlic - 1 clove (minced and mixed in 2 tbsp olive oil)
Olive oil - 2 tbsp.
Eggplant - 3 small (thinly sliced)
Kosher salt - to taste
Mozzarella - 1 cup (shredded)
Tomatoes - 4 small (thinly sliced)
Parmesan cheese - 1/4 cup (grated)
Basil leaves - for garnish
Method of preparing the Tomato-Eggplant Tartines:
  1. Grill the Italian bread 5 minutes. Once it's well toasted, move it to large platter. Rub bread with garlic-oil mix.
  2. Grill the eggplants lightly in 2 tbsp olive oil. Sprinkle with salt. Turn slices over and top with mozzarella. Grill until the cheese melts.
  3. Top the bread with tomatoes and salt and layer with the sliced eggplants. Sprinkle with parmesan and garnish with basil.
