Spicy Pickled String Beans

Have some leftover string beans on your hands? Instead of throwing them into the trash, turn them into these delicious preserves! These pickled string beans are marinated in spicy brine, so they're just perfect to put into homemade tacos and wraps.

Spicy Pickled String Beans
Ingredients for Spicy Pickled String Beans:
Green beans - 4 cups (cooked)
Sugar - 2 tsp.
Salt - 2 tsp.
Peppercorns - 2 tsp.
Garlic - 5 cloves (thinly sliced)
Dill - 4 sprigs
Coriander seeds - 1 tsp.
White vinegar - 2 cups
Method of preparing the Spicy Pickled String Beans:
  1. Divide all ingredients evenly between 2 jars.
  2. Seal and shake the jars for a minute or two to distribute the liquid evenly.
  3. Transfer the jars to the fridge and store for at least 3 days before consuming.
  4. These spicy pickled green beans will stay fresh for a week or so.
