Refrigerator Pickled Peppers

Pickled peppers are a classic condiment to sandwiches and grilled meat. In addition, unlike many other preserves, you don't have to wait for days to prepare delicious pickled peppers. This recipe, for example, takes minutes to prepare and just a few hours to ferment. And the results are perfectly soft, sweet, and slightly tangy pickled peppers.

Refrigerator Pickled Peppers
Ingredients for Pickled Peppers:
Water - 1 cup
White vinegar - 1/2 cup
White sugar - 1/3 cup
Kosher salt - to taste
Red bell pepper - 3 (halved)
Method of preparing the Pickled Peppers:
  1. In a small saucepan, combine water, vinegar, sugar, and salt in a saucepan; bring to a boil. Add red bell peppers to the boiling water mixture, reduce heat to medium-low, and simmer until peppers are softened, 8 to 10 minutes.
  2. Pack the peppers into jars, and cover them with the brine. Wait for the brine to cool down to room temperature. Then seal the jars and refrigerate for at least 8 hours or overnight before consuming.
