Vegetarian Fajita

This Tex-Mex favorite is usually served with beef strips over a tortilla. But what about those who prefer a vegetable-based meal every so often? 

You can use this Tex-Mex steak seasoning for flavor.

Ingredients for pasta fajita:
Bell pepper - 3 (1 green, 1 red, 1 yellow)
Button mushrooms - 2 1/2 cups (sliced)
Onions - 1 (chopped)
Chili powder - 1 tbsp.
Smoked paprika - 1 tbsp.
Garlic powder - 1 tbsp.
Ground cumin - 1 tbsp.
Salt - 1 tsp.
Black pepper - 1 tsp.
Olive oil - 3 tbsp.
Pasta - 4 cups (any shape, penne is best)
Sour cream - 1 1/2 cups
Pepper Jack cheese - 3 cups (grated)
Method of preparing the pasta fajita:
  1. Preheat oven to 400°F. Line a baking sheet. Slice the peppers into strips and arrange them with the onion and mushrooms on the sheet.
  2. Mix the spices in a small bowl. Drizzle the oil over the veggies. Using half the spice mix, coat the vegetables and bake for 30 minutes. Remove from oven but don't turn it off just yet.
  3. Cook and drain the pasta but keep 1 cup pasta water. In the pasta pot, mix the pasta, veggies, remaining spice mix, sour cream and the 1 cup pasta water.
  4. Spread everything evenly on a deep baking dish, sprinkle with cheese, bake 15 minutes and cool 5 minutes before serving.
