Salade Niçoise

This salad is your new hero. It will last you up to a week in the fridge, so make it in batch ahead of a busy one and enjoy it all week long. It will keep you full and healthy and happy. It originates in Nice, France, and originally it didn't have cooked vegetables. Those were added later, instead of tomatoes.

Salade Niçoise
Ingredients for salad:
Potato - 4 (diced)
Green beans - 1/2 cup (sliced)
Hardboiled eggs - 2 (diced)
Shallots - 1 (chopped)
Kalamata olives - 1/4 cup
Lemon juice - from 1 lemon
Olive oil - 3 tbsp.
Mustard - 1/4 tbsp.
Salt - as needed
Method of preparing the salad:
  1. Put the potatoes in cold water and boil. Let cook 15 minutes and add the green beans.
  2. After a minute or two, drain and put in a bowl. Add the eggs, shallot and olives. In another bowl or jar, mix the rest of the ingredients.
  3. Dress the salad and chill in the fridge for 20 minutes before serving.
