Tuscan Salad With Peaches

You'll be having this one for breakfast, dinner and lunch. You know that stale bread you have from the weekend? Use it to make croutons for this salad. We love a roasted salad that only takes 10 minutes to serve!

Ingredients for salad:
Red onion - 1/2 (sliced)
White wine vinegar - 1/2 cup
Croutons - as needed
Olive oil - as needed
Salt and Pepper - as needed
Peaches - 8 small or 4 large (sliced)
Borata cheese - 7 oz.
Method of preparing the salad:
  1. Mix the onion in vinegar and let sit. Mix the peaches in olive oil, salt and pepper and let sit.
  2. Lightly roast the peaches 2-3 minutes on each side.
  3. Arrange all ingredients in a bowl, season with more oil and serve.
Chef's Tip:
Add some basil if you'd like.
