Pickled Mangos

This divine aromatic pickled mango will be ready to serve in a night. You would usually use mangos in a dessert or a sweet type of dish, but this pickled version will star in your salads if you only give it a go. If you like the idea of mango in savory dishes, try it fresh in a salad with parsley.

Pickled Mangos
Ingredients for pickled mango:
Cinnamon - 1 stick
Ground cumin - 1 tsp.
Peppercorns - 1/2 tsp.
Cardamom pods - 3 (crushed)
White vinegar - 3/4 cup
Water - 3/4 cup
Sugar - 1/4 cup
Lemon juice - from 1/2 lemon
Ginger root - 6 slices
JalapeƱo - 2 small
Salt - 1 tsp.
Mango - 2 (ripe and sliced to 1/2 inch thick sticks)
Method of preparing the pickled mango:
  1. Toast the cinnamon, cumin, peppercorns and cardamom for 4 minutes. Add them to a pot and combine with the rest of the ingredients, leaving the mango outside for now.
  2. Cook over medium heat for 5 minutes. Let the sugar dissolve but don't boil.
  3. Divide the mango slices into jars and pour the liquid over. Once cooled, lid and chill in the fridge overnight. Serve the next morning!
