Easy Cashew Chicken

Easy Cashew Chicken
Ingredients:
Chicken thigh fillets - 3 (skinned and cubed)
Canola oil - 2 tbsp.
Cashews - 1/4 cup (toasted)
Bell pepper - 1/2 (chopped)
Rice vinegar - 1 tbsp.
Soy sauce - 1 tbsp.
Sesame oil - 1 tbsp.
Sesame seeds - 1 tbsp.
Green onions - 1 tbsp. (chopped)
White onion - 1/4 onion (chopped)
Salt - to taste
Black pepper - to taste
Garlic - 1 tbsp. (minced)
Chili garlic sauce - 1/2 tbsp.
Ginger - 1/2 tsp. (grounded)
Method of Preparation:
  1. Heat oil in a pan over medium heat and cook the chicken through.
  2. Add the soy sauce, rice wine vinegar, and toasted cashews. Cook on high and allow the liquid to reduce down until it’s a sticky consistency.
  3. Add the rest of the ingredients, apart from the sesame seeds and oil, and toss until cooked to your liking.
  4. Serve topped with sesame seeds and a drizzle of sesame oil.
