  1. Blend strawberries in a food processor.

How to prepare:

  1. Crumble the cookies in a bowl.
  2. In another bowl stir the sugar and water until the sugar dissolves.
  3. Add the sour cream, milk, cream, vanilla and stir.

How to prepare:

  1. Bring water and sugar to a boil in a pan over medium heat to make a syrup.
  2. Once the sugar has dissolved take the syrup out of the pan and let it cool.
  3. Add the syrup together with the avocado, salt, and lemon juice in a blender.
  4. Blend until its creamy enough to pour.

9. Spicy Watermelon

How to prepare:

  1. Cut a watermelon in half and then into slices.
  2. Remove the rind, and cut the slices into 1 inch cubes.
  3. Peel the tomatoes.
  4. Blend both the watermelon and tomatoes.
  5. Use a strainer to remove the large chunks.
  6. Thinly slice the jalapeño peppers and add them to the tomato-watermelon mixture.
  7. Refrigerate this mixture for an hour to infuse the juice with heat.
  8. Pour the mixture into popsicle molds and freeze for 6 hours.
10. Blood orange and coconut cream

  • 2 cups unsweetened coconut milk, halved
  • 3 tablespoons maple syrup
  • 1 cup blood orange juice
  • Sliced strawberries
  • lime juice

  1. Add 3 tablespoons maple syrup to sweeten one cup of coconut milk and leave the other cup unsweetened.
  2. Pour the sweetened milk into the popsicle mold filling it 1/3 of the way.
  3. Add sliced strawberries.

  6. Mix the lime and orange juice and fill the popsicle mold until it is 2/3 full.

11. Apricot and rice pudding

  • 1 cup milk
  • 3/4 cup unsweetened coconut milk
  • 1/4 cup cream
  • 2 x 1/2 cup water
  • 1 lemongrass stalk, thinly sliced
  • 1 tablespoon ginger (minced and peeled)
  • 1/2 vanilla bean, split lengthwise
  • 3 tablespoons short-grain rice
  • 1/4 cup of dried apricots pieces
  • 1/4 cup sugar

How to prepare:

  1. Mix milk, cream, coconut milk, lemongrass, ginger and water.
  2. Add vanilla bean seeds and bean.
  3. Bring to a boil.
  4. Let cool for 15 minutes.
  5. Place rice in 1/2 cup of water for 10 minutes and then drain.
  6. Strain coconut mixture through a sieve and add the rice.
  7. In a saucepan bring to a boil and then let it simmer on a low heat for 30 minutes, until the rice is soft.
  8. Once cooled stir in apricots and sugar.
  9. Freeze for at least 3-4 hours.
12. Kiwi and pineapple
