Turkey Tetrazzini

This Turkey Tetrazzini recipe helps turn your precooked turkey into a hearty dish that will have you licking your lips. This easy casserole is extra savory and creamy. It's also studded with mushrooms and cheese, making it an easy weeknight meal for everyone in the family.

Ingredients for Turkey Tetrazzini:
Spaghetti - 1/2 lb (uncooked) (broken into thirds)
Butter - 5 tbsp. (or margarine)
Onions - 1 medium (chopped)
Bell pepper - 1 (chopped)
Button mushrooms - 8 oz (quartered)
Dry sherry - 1/3 cup
Alfredo pasta sauce - 20 oz. (canned is fine)
Parmesan cheese - 1/2 cup plus 2 tbsp. (finely shredded)
Turkey meat - 3 cups (cut up and cooked )
Breadcrumbs - 1/2 cup
Almonds - 1/2 cup (sliced )
Method of preparing the Turkey Tetrazzini:
  1. Heat oven to 350°F (180°C). Spray a 13x9-inch baking dish with cooking spray. Cook and drain the spaghetti
  2. In a deep saucepan, melt 3 tbsp of the butter over medium flame. Cook and stir onion in butter for 3 minutes or until the onion begins to soften. Stir in the bell pepper and mushrooms. Cook and stir 5 to 8 minutes longer or until vegetables are tender.
  3. Add the sherry, Alfredo sauce, and 1/2 cup of cheese. Cook and stir for around 2 minutes. Stir in the turkey and spaghetti. Transfer everything into baking dish.
  4. In a small bowl, stir together bread crumbs, the remaining 2 tbsp butter, and the remaining 2 tbsp cheese. Sprinkle the bread crumbs and sliced almonds over the mushroom mixture.
  5. Bake for about 30 to 35 minutes, or until the topping is golden brown. Bon Appetit!
