Creamy Cauliflower Mash

Who said mash can only be made from potatoes? This recipe makes a satisfying bowl of cauliflower mash, with some interesting toppings - bacon and scallion. These can both be easily modified according to your preferences! This dish would make a perfect side to complement the main dish.

Ingredients for Cauliflower Mash:
Cauliflower - 2 heads (cut into florets)
Bacon - 1-2 slices
Scallion - 1 (thinly sliced)
Salt - to taste
Ground black pepper - to taste
Butter - 1 1/2 tbsp.
Method of preparing the Cauliflower Mash:
  1. Fill a large pot or skillet with 1-2 inches of water (depending on the size) and place over medium-high heat.
  2. Place the cauliflower florets into a steamer basket and put them into the pot. Make sure the water isn't covering the vegetables. Cover the pot and leave to cook until the cauliflower has softened (about 10 minutes).
  3. While your cauliflower is being cooked, prepare the diced bacon bits in a separate pot and fry them on medium-high heat, until crispy. Leave to drain on paper towels when they're done.
  4. When the cauliflower is tender enough that it can be pierced with a fork, place it in a food processor, together with butter, and blend.
  5. Place the mixture in the serving dish and sprinkle with diced bacon, scallions, and some optional salt and pepper for more taste.
