Oreo Vanilla Ice Cream Cake

This Oreo ice cream cake is very easy to make and it's also better than the store-bought frozen dessert. Once you've prepared the Oreo ice cream, putting it together with the cookies is pretty easy and will only take you 10 minutes to prepare.

If you're short on time, you can use the store-bought version and layer it according to the recipe.

Ingredients for Oreo ice cream:
Whole milk - 1 cup (chilled)
Sugar - 2/3 cup
Heavy cream - 2 cups (chilled)
Vanilla Extract - 2 tbsp.
Oreo cookies - 1 cup crumbs plus 20 cookies
Whipped cream - 3 cups
Chocolate sauce - as needed
Method of preparing the Oreo ice cream:
  1. Whisk the milk and sugar together in a bowl until the sugar has thoroughly dissolved.  Add the heavy cream and the vanilla. 
  2. Transfer the mix into an ice cream maker and freeze. Then stir in the crumbled Oreos and freeze, transfer to a rectangular air-tight container and freeze for an additional 3 hours. If you don't have an ice cream maker, transfer the mix into a large square dish, pour a 1-inch layer, mix in the crumbs and let freeze. Once your ice cream is ready, slice it into 3 wide strips to make 3 layers of ice cream.
  3. Line a long, deep baking dish with parchment and place the Graham crackers at the bottom of the pan. Top with 1 inch of the ice cream you made.
  4. Spread 1 cup whipped cream over the top of the ice cream and press whole Oreo cookies into the whipped cream. Then top with a small layer of whipped cream .
  5. Top with a further 2 layers of 1-inch ice cream and the remaining Graham crackers. Then spread the remaining 1 cup of whipped over the crackers. 
  6. Cover and freeze for a couple of hours, but preferably overnight. Then, remove the cake from the pan and place it on a tray or serving plate. Pour about 1 cup of chocolate sauce and crush on any remaining Oreo cookies. Enjoy!
Chef's Tip:
If you only want some ice cream, you can stop after you've finished step 2. You can also use store-bought ice cream.
