Gourmet Microwave Meals in a Mug

I always thought the microwave was an appliance for thawing frozen goods or warming up leftovers. Then I discovered microwave recipes! You can make breakfast, lunch, dinner and even dessert in a fraction of the time, and still eat a nutritious, delicious meal. These recipes are made for smaller portions so no need to worry about leftovers or buying large quantities.

 

Breakfast

1. Egg and Toast

A twist on the traditional poached egg on toast, this microwave meal is the perfect way to start the day.

Recipe

Ingredients:

  • 100ml of water
  • 1 egg
  • 1 slice of bread
  • 10g butter
  • 5ml spoon of malt or white vinegar

Directions:

  1. Boil the kettle.
  2. In a small bowl, break the egg.
  3. Toast the bread and spread thinly with butter.
  4. Cut this into squares of 5cm (2 inches).
  5. Fill the cup with the boiling water, one-third full.
  6. Add the vinegar and the egg.
  7. With the tip of a sharp knife, prick the egg yolk.
  8. Place the cup in the microwave for 30 seconds on high.
  9. Remove the cup and gently turn the egg over.
  10. Microwave for another 10 seconds.
  11. Mix the egg and toast on a plate.

2. Huevos Rancheros egg whites

Another breakfast filled with protein that can be made in less than 5 minutes.

Recipe

Ingredients:

  • Cooking spray
  • 1/2 cup egg whites
  • 2 tablespoon of grated cheese
  • 1 tablespoon of bacon pieces
  • 1/8 teaspoon of chili powder (optional)
  • 1 tablespoon of spicy black bean & corn tomato salsa

Directions:

  1. Spray your mug with cooking spray.
  2. In this mug stir an egg, tablespoon of cheese, bacon and chili powder, with a fork.
  3. Microwave this mixture for one minute on high.
  4. Stir and microwave for 30 seconds, or until the eggs are set.
  5. Sprinkle the remaining cheese and pour the salsa on top.

3. French toast

This easy meal can be made in 2 minutes. Top it off with syrup or whipped cream for the perfect piece of French toast.

Ingredients:

  • A slice of bread
  • 1 egg
  • 2 tablespoons of milk
  • A pinch of cinnamon for taste

Directions:

  1. Cube the bread.
  2. Break an egg in a bowl.
  3. Add the milk to the egg and mix with a fork.
  4. Add a sprinkling of cinnamon.
  5. Pour the mixture into a cup.
  6. Let the cubed bread soak in the egg mixture for a minute.

Recipe:

Batter ingredients

  • 1 tablespoon butter
  • 1 tablespoon brown sugar
  • ½ egg
  • 2 tablespoons sour cream
  • 1 teaspoon maple syrup
  • 1/4 cup self-rising flour
  • 1/4 teaspoon ground cinnamon
  • Vanilla extract (a few drops)
  • 1 teaspoon apricot or other preserves

Directions:

  1. Mix the softened butter with brown sugar in a large measuring cup. Mix until creamy.
  2. Add the egg, sour cream, syrup, and vanilla.
  3. Beat all together until it’s blended.
  4. Add the flour and cinnamon, beating until the mixture is smooth.
  5. Pour half the batter in a 12 oz. cup. Add the apricots in the center then pour the remaining batter over this.
  6. Make the topping and sprinkle this with the crumb topping (ingredients and instructions below).
  7. Microwave on high for a minute and 15 seconds.

Topping ingredients:

  • 2 tablespoons all-purpose flour
  • 2 tablespoons brown sugar
  • 1 tablespoon butter, softened
  • Pinch cinnamon and salt

Directions:

  1. In a small bowl combine the ingredients, mixing with your fingers.
  2. Pinch the mixture together until crumbs form.

5. Cheese and herb muffins

A delicious morning snack with much flavor, these large muffins can feed two. They taste delicious served warm.

Recipe

Ingredients:

  1. 100g grated Parmesan cheese
  2. 10g fresh chopped basil or 15 spoons dried basil
  3. 10g fresh chopped chives or 15 spoons dried chives
  4. ½ x 5 spoons thyme leaves
  5. 250g self-raising flour
  6. 1 x 5 spoons bicarb. soda
  7. 2 eggs
  8. 85ml sunflower oil
  9. 100ml milk
  10. 100ml yogurt

Directions:

  1. Mix the flour and bicarb soda together, then add the grated cheese and chopped herbs.
  2. In a separate jug beat the eggs and add the oil.
  3. Add the milk and yogurt to the egg mixture.
  4. Add the wet ingredients to the dry ingredients, and combine well.
  5. Pour the mixture into 3 mugs, filling a third of each mug.
  6. Cook for 4 minutes on high, or until raised and firm to touch.
  7. The remaining mixture can used to make another 3 mugs of muffins.

Lunch or Dinner

6. Chilaquiles

The perfect opportunity to make use of leftovers from taco night with this Mexican themed meal.

Ingredients:

  • 1 egg
  • 1 tablespoon milk
  • Salt, pepper
  • 1 tablespoon cheddar cheese
  • 5 tortilla chips
  • 1 tablespoon salsa
  • Sour cream
  • Queso fresco
  • Chopped green onion

Directions:

  1. In a coffee cup, beat an egg and milk with a fork.
  2. Sprinkle with salt and pepper for taste.
  3. Add in the cheddar and stir to coat.
  4. Break 4 tortilla chips into small pieces and stir into the mix.
  5. Add the salsa.
  6. Microwave for 1 minute and 10 seconds.
  7. Garnish with a tortilla chip, sour cream, queso fresco and the chopped green onion.

7. Mac and cheese

  • 1/3 cup pasta
  • 1/2 cup water
  • 1/4 cup milk
  • 1/2 cup grated cheddar cheese

Directions:

  1. In a large mug, mix the pasta and water.

  • 2 tablespoons quick-cooking oats
  • 1 teaspoon onion soup mix
  • Cooking spray

9. Quiche

Make a quiche without having leftovers. This recipe uses ham or prosciutto, but you can substitute with spinach to make it vegetarian.

  3. Mix the cream until the chocolate is completely melted and smooth.
  4. Drizzle over the donuts.

  • 2-3 tablespoons graham cracker crumbs
  • 3 1/2 tablespoons butter, melted
  • 2 tablespoons sugar
  • 1 large egg

  9. Pour half the mixture over the graham cracker crust, and a few marshmallows.
  10. Pour the remaining batter over.
  11. Microwave for 1 and half minutes.
  12. Top with additional marshmallows and graham cracker crumbs.

13. Cinnamon roll

Cinnamon rolls usually take a long time to make. Shorten the wait for cinnamon goodness with this 3 minute recipe.

  • 1/4 teaspoon vanilla extract

  • 1 tablespoon cream cheese, softened
  • 2 tablespoons powdered sugar
  • 1 teaspoon milk

Icing directions:

  1. Combine the icing ingredients (milk, sugar and cream cheese) in a bowl.
  2. Whisk with a fork or hand-mixer until blended smooth.
