While nothing beats warm, comfort food in the winter months, come summer, I love nothing more than light and nutritious snacks. One summer dish that stands out above the rest are cucumber rolls. They can be stuffed with just about anything and most recipes do not require that you switch on the oven. They tend to be pretty addictive too - it's hard to stop at just one!
These cucumber rolls are filled with a delicious hummus recipe. Watch how they are made in the video below, then be sure to save the recipe listed just beneath the video. Enjoy!
Here's the recipe:
Prep Time: 10 minutes; Total time: 15 minutes
Ingredients (Serves 4)
2 to 3 cucumbers
1 cup hummus (or get the recipe here)
½ cup crumbled feta cheese
½ cup red bell pepper, finely diced
20 pitted Kalamata olives, roughly chopped
2 tablespoons oregano, roughly chopped
¼ teaspoon ground black pepper
1. Using a vegetable peeler thinly slice the cucumber lengthwise, about 2mm thick. Place the cucumber slices on a paper towel.
2. Meanwhile, prepare the filling. In a medium bowl, mix the hummus, feta, red pepper, olives, oregano and black pepper. Mix until all the ingredients are combined well.
3. Place one tablespoon of the filling on each cucumber slice then roll them up. Use a toothpick to secure each roll, chill the cucumbers and serve.
