Ginger Christmas Biscuits

Christmas is the only time of the year when it is socially acceptable for friends and family members to drop by your home unannounced, and neighborly interactions evolve from polite nodding to full on socializing. Prepare yourself for such emergencies by having a batch or two of these delicious ginger Christmas biscuits handy.

Ginger Christmas Biscuits
Ingredients:
All-Purpose flour - 2 3/4 cup (plus extra for rolling out)
Ginger - 2 tsp.
Ground cinnamon - 1 tsp.
Butter - 9 tbsp.
Light brown sugar - 3/4 cup
Egg - 1
Golden syrup - 4 tbsp.
Baking soda - 1 tsp.
Method of Preparation:
  1. Mix together the flour, ginger, baking soda, and cinnamon and pour into a food processor. Add the butter, and blend until the mix resembles breadcrumbs. Stir in the sugar.
  2. Lightly beat the egg and golden syrup together, add to the food processor and pulse until the mixture clumps together. Tip the dough out, knead until smooth, wrap in plastic wrap, and leave to chill in the fridge for 15 minutes.
  3. Preheat the oven 180°C/350°F. Line two baking trays with some greaseproof paper.
  4. Roll the dough out to a 1/4 inch thickness on a lightly floured surface. Using cutters, cut out the gingerbread man shapes and place them onto the baking tray, leaving a gap between them.
  5. Bake for 12-15 minutes, or until lightly golden-brown. Leave on the tray for 10 minutes and then move them to a wire rack to finish cooling. When fully cooled, decorate with icing paste and cake decorations.
