Ingredients (serves 4)
1. Preheat the oven to 400º F. Meanwhile, in a medium bowl, combine the maple syrup, bourbon, orange juice, soy sauce, garlic, cayenne, salt and pepper. Place the salmon in a baking dish and add the marinade to the fish, submerging it completely. Refrigerate and let it sit for 30 minutes.
2. Drain most of the marinade (setting it aside) and bake the salmon for 10 to 15 minutes. Depending on the thickness of the fish, you may need to adjust the cooking time.
3. As the salmon cooks, pour the marinade into a sauce pan and bring to a boil. Reduce the heat to low and let it simmer until the liquid has thickened into a glaze-like consistency. This should take about 10 minutes. Remove the fish from the heat and cover the salmon with the glaze. Serve immediately, dig in and enjoy!
