Rainbow Cake

There’s nothing better than the look on people’s faces when you cut open a colorful rainbow cake. This recipe, while not looking so, is actually also diet-friendly because it’s sugar-free. No matter what, your guests will be impressed with the colors and be tempted to give it a try.

Rainbow Cake
Ingredients for rainbow cake:
Cake mix - 1 box (white cake mix is best)
Soda - 1 can (either Sprite, 7-Up, or ginger ale.)
Food coloring - purple, blue, green, yellow, red, orange
Whipped topping - 8 oz.
Instant pudding - 1 box
Method of preparing the rainbow cake:
  1. Preheat oven according to cake mix instructions. Mix the cake mix and add soda. Divide batter into 6 equal parts.
  2. Stir in the food coloring. Using 2 round baking pans, pour in the colors in concentric mounds. preperation
  3. Bake according to the box instructions. You may need to add 5-10 minutes. Test with a toothpick. If the cake comes out the pan easily, place it on a wire rack and let it sit until it’s cool. 
  4. Mix the pudding mix and the whipped topping. Ice the cakes.
