Rainbow Cake Recipe: Bursting with Color

 There’s nothing better than the look on people’s faces when you cut open a colorful rainbow cake. This baked goods recipe is suitable for all ages and occasions so you’re bound to use it soon. It’s also diet-friendly because it’s sugar-free. The instructions include using a convenient box mix, but it’s easy to adapt to any white cake recipe. No matter what, your guests will be impressed with the colors and be tempted to give it a try.

Cake ingredients:

  • 1 box white cake mix
  • 1 can 12 Fl. oz (~355 ml) clear diet Sprite or ginger ale
  • Gel food coloring
  • 8 oz (~226g) whipped topping
  • 1 box of 2 oz (~60 g) instant fat-free, sugar-free pudding mix

Cake instructions:

  • Preheat your oven (temperature will be on the cake mix box instructions)
  • Take the whipped topping out of the fridge (so that it is room temperature for later when you prepare the frosting).
  • Mix the cake mix according to the box’s instructions.
  • Pour soda into the cake mix.

Making it Colorful

Divide the recipe into 6 and place equal amounts in 6 mixing bowls.

My recipe weighs 30 oz. (or 850 gram). If you’re following the same proportions, each bowl should have half a cup or 5 oz. (140g) of mixture.

Stir the gel color into each bowl, using different spoons. This is important because it prevents the gel colors from mixing. Gel dye was chosen because the colors are brighter than liquid food dye.

Ordering the colors

Use two pans because this will be a double layer cake. The layers from each pan should be equal in size if you follow the instructions.  Using a measuring spoon pour the colors, one by one, in concentric mounds. The mixture should spread with each additional color, and the colors won’t mix due to the firm texture.

Pan 1  

In the middle of the pan, pour out  to ¾ of the red mixture, followed by the same amounts of the orange and yellow mixtures.

Pour   to ¼ of the green, blue and purple mixtures respectively.

Note: The other ⅓ to ¼  and  to ¾ of the remaining
mixture will be used in the second pan.

The second pan will be the reverse colors so that no one color dominates the center of the cake.

Similar to pan 1, pour  to ¾ of the purple, blue and green mixtures into the center, followed by  to ¼ of the yellow, orange and red mixtures respectively.

Put the cake in the oven

The soda is denser than regular recipe liquids so I would suggest adding 5-10 minutes onto the box’s timing.

While it’s baking, you can prepare the frosting.

Test with a toothpick or cake tester. If the cake comes out the pan easily, place it on a wire rack and let it sit until it’s cool.

Prepare the frosting

Because of the bright colored interior I recommend a single color for frosting. I used white for the contrast effect.  

Frosting ingredients:

  • 1 box of fat-free, sugar-free pudding mix
  • 8 oz (~226g) fat-free whipped topping

Mix the frosting

Mix the pudding mix and the whipped topping. Your whipped topping should be room temperature. Add dye if you want to color the frosting.

Frosting tips: If you frost with a knife, warm it a bit as this helps spread the frosting easier. For more decorative techniques use a piping bag.
