Types of Black Salt

There are actually 3 distinct types of black salt – Indian black salt, black lava salt, and black ritual salt – all of which are very different from one another. First of all, there is Indian black salt (kala namak), which has an incredible amount of uses, and which shall be the sole focus of this guide.

Then there’s black lava salt, which is black in color due to it being a mixture of regular sea salt and activated charcoal. It is typically used by chefs to finish meals, since it has quite a particularly earthy flavor, and is often labeled as Hawaiian black salt.

Finally, there’s black ritual salt, which is used in Wiccan spells and rituals to drive away evil spirits and negative energy. This type of black salt is usually made by mixing regular rock salt with charred pieces of ash, iron, and herbs.

What Is Black Salt Composed Of?

Indian black salt consists mainly of sodium chloride and trace impurities of sodium sulfate, as well as sodium bisulfite, sodium bisulfate, iron sulfide, sodium sulfide, and hydrogen sulfide.

To turn these raw materials into black salt, a reductive chemical process is used to change the sodium sulfate present into a mixture of sodium sulfide and hydrogen sulfide. To do this, the raw salt needs to be fired into a furnace for over 24 hours, while sealed within a ceramic jar containing charcoal, as well as minuscule amounts of amla, harad seeds, babul bark, bahera, or natron. Once complete, the black salt then needs to be cooled, stored, and aged.

Black salt may also be manufactured synthetically. To do this, manufacturers usually combine sodium chloride with smaller amounts of ferric sulfate, sodium bisulfate, and sodium sulfate, before chemically reducing them with charcoal inside a furnace.

Tofu Omelet

Ingredients
• Cornstarch, 1tsp
• Chickpea flour, half a cup
• Olive oil, 2tbsp
• Black salt, 1tsp
• Turmeric, half a tsp
• Nutritional yeast, 2tbsp
• Soft tofu, 14oz
• Garlic, 2 cloves
• Anything you want to fill it with (optional)

Method
1. Finely chop the garlic using a food processor.
2. Add the yeast, tofu, turmeric, black salt, and olive oil. Then, puree until smooth.
3. Add the cornstarch and flour, and puree again until combined.
4. Preheat a large, non-stick, heavy-bottomed skillet over medium-high heat.
5. Pour the batter into the skillet in half-cup measures.
6. Let it cook on one side for 3 to 5 minutes, before flipping it over and cooking the other side for about a minute.
7. Stuff the omelet with fillings of your choice, and fold it over.
8. Sprinkle some more black salt over it, and serve!


Chickpea Flour Scramble
Ingredients - Batter:
• Chickpea flour, half a cup
• Water, half a cup
• Black salt, 1/8tsp
• Regular white salt, 1/4tsp
• Nutritional yeast, 1tbsp
• Flaxseed meal, 1tbsp
• Paprika powder, 1/4tsp
• Turmeric, 1/4tsp
• Baking powder, 1/2tsp

Ingredients - Vegetables:
• Garlic, 1 clove
• Vegetable oil, 1tsp
• Chopped onions, ¼ cup
• Green chili, one half
• Asparagus, bell peppers, zucchini or other vegetables, 2tbsp each
• Tomatoes, 2tbsp
• Black pepper or cilantro for garnish

Method
1. Blend all of the batter’s ingredients together, and keep to one side.
2. Heat half a tsp of oil in a skillet over medium heat.
3. Add garlic and onion and cook until translucent.
4. Add the chili and vegetables, and cook for another 2 minutes.
5. Add the tomatoes, and mix them well.
6. Pour the batter over everything, and cook for a couple of minutes, until the edges begin to set.
7. Drizzle half a tsp of oil onto the edges.
8. Scramble it all, and continue to cook it for another 2 minutes.
9. Scramble it again, and allow it to cook once more for another 2 to 3 minutes.
10.  Let the mixture cool for 1 to 2 minutes, before breaking it up into smaller chunks.
11.  Sprinkle black pepper generously over it and garnish with salt and cilantro.


Egg-Style Avocado Salad Sandwiches

• Potato bread, 8 slices
• Black salt, half a tsp
• Avocados, 2, diced
• Mayonnaise, 1/3 cup
• Paprika, ¼tsp
• Black pepper, ¼tsp
• Green onions, 2, sliced
• Yellow mustard, 2tbsp

Method
1. Whisk the mayo, green onions, black pepper, mustard, and paprika together in a bowl.
2. Add the avocado, sprinkle with black salt, and mix together.
3. Divide the mixture between 4 slices of bread.
4. Use the remaining slices to top the sandwiches with.
