Italian Baked Eggs Make for a Filling Breakfast

It is said that breakfast is the most important meal of the day and I couldn't agree more. At this time of year, however, I enjoy comfort food - a recipe that is warm, rich and hearty. I often like to include eggs in my morning meals, due to their nutritional benefits. To give it more of a wintry feel though, I paired my eggs with tomatoes and some cheese. Your taste buds will be tingling after watching how this delicious recipe is made:

 

Here's the recipe:

• 4 tablespoon extra-virgin olive oil
• 1 medium onion coarsely chopped
• 3 cloves garlic thinly sliced
• 1 teaspoon hot chili flakes
• I tin (14oz/400ml) tomatoes, crushed
• 8 large eggs
• 1/4 grated cheddar or Parmigiano Reggiano 
• Shredded basil
• Salt and pepper

METHOD
1. Over medium heat, place a skillet, ideally cast iron, on the grill.
2. Add the oil, heating until hot.
3. Sauté chopped onion, garlic, and chili flakes. Cook until softened and light brown, for about 8 minutes. 
4. Add crushed tomato and simmer. Cook for 10 minutes.
5. Turn off the heat and dish out the sauce into your separate dishes.
6. Crack the eggs one at a time into your dishes. Sprinkle over the grated cheese and season with salt and pepper. 
7. Cook at 400°F (200°C) for 12-15 minutes. 
8. Remove the pan from the oven and let sit for 3 minutes.
9. Sprinkle with fresh basil and serve with toast.
