7-Up Pound Cake

What's the secret to making a delicious pound cake? According to this recipe, it all comes down to one ingredient, which you are likely to already have stocked in your kitchen. This secret ingredient will add flavor and moisture to what is normally seen as a plain cake. It is also used in the glaze to give it an extra kick.

Ingredients for icing:
Powdered sugar - 1 cup
7-Up soda - 2 tbsp.
Ingredients for cake:
Unsalted butter - 1 cup (softened to room temp)
Granulated sugar - 2 cups
Eggs - 5
Vanilla Extract - 1 tsp.
Lemon juice - 2 tbsp.
Lime zest - from 1 lime
Lemon zest - from 1 lemon
Salt - 1/2 tsp.
Soda - 1 cup (7-Up)
Method of preparing the cake:
  1. Preheat the oven to 325°F. Grease and lightly flour a cake pan.
  2. With the help of a mixer, combine the butter and sugar until creamy and beat in the eggs, one at a time.
  3. Fold in the vanilla, citrus zests and juices. Then gradually add the flour and salt and mix well.
  4. Mix in heavy whipping cream and 7-up until well combined and the batter appears fluffy.
  5. Spoon the batter into a bundt pan and bake for 1 hour. Check on the cake by inserting a knife into the middle. If ready, it should come out clean. If it needs more time, bake it for no longer than 15 additional minutes.
  6. Remove from the oven and let set until the pan is warm. Move to a cooling rack, and drizzle with the icing before serving.
