What Secret Ingredient Makes This Fried Chicken So Tasty?

I think everybody loves an occasional piece of fried chicken (or 10), and I am no different. But this here is the greatest, crunchiest and juiciest fried chicken I have ever had the pleasure to taste. And what makes this recipe so extraordinary is its surprisingly ordinary secret ingredient. Ingredients

  • 1 kg chicken, cut into 8 pieces 
  • 1 cup flour
  • ½ cup instant mashed potato powder
  • 1 tbsp. salt
  • 1 tbsp. mixed dried herbs
  • ½ tsp. ground black pepper
  • ¼ tsp. cayenne pepper
  • ½ tbsp. garlic powder
  • 1 tbsp. onion powder
  • 2 eggs
  • ¼ cup water
  • Canola oil for frying

Directions
1. Add the flour to a small mixing bowl. Combine with salt, pepper, cayenne, garlic powder, onion powder, and dried mixed herbs.
2. Add the secret mashed potato powder and mix it all together thoroughly.
3. In a separate bowl, add the two eggs and mix together with water to make an egg wash.
4. Dip each chicken piece into the egg wash, then into the flour mix, covering completely. Put the pieces together onto a large plate and set them aside for 20 minutes.


5. Then, repeat the process a second time for each chicken piece. Again leave the pieces aside for 20 minutes.
6. In a frying pan reheat the canola oil to 180°
C (356°F). Then add around half the chicken pieces into the pan. 
7. Turning the pieces every 3-4 minutes, cook for 15 minutes. Remove from the pan onto a rack to remove any excess oil. 
8. Then repeat steps 6 and 7 with the rest of the chicken pieces (using the same oil). 
9. Let the chicken pieces cool for 10 minutes so you don’t burn any mouths. 
10. Tuck in and enjoy!
