How to Make Bacon-Tomato Cobbler

 

Cobbler is normally associated with the word "peach", rather than "bacon" or "tomato", but this is a recipe to break all convention and turn something that was once sweet into something savory! Impress friends and family with this easy-to-make cobbler dish:

Ingredients

  • 2½ Roma tomatoes, sliced into ½-inch-thick slices  
  • 1 large onion, quartered sliced and caramelized
  • 1 cup shredded sharp cheddar cheese
  • 1 cup grated Havarti cheese
  • 4 oz. goat’s cheese
  • 6 slices cooked bacon, chopped
  • 2 tsp. chopped fresh thyme
  • 4 tbsp. chopped fresh parsley  
  • ¼ tsp. salt
  • ¼ tsp. cayenne
  • 4 tbsp. milk
  • 6 oz. self-rising flour
  • 6 oz. heavy cream
  • Aluminum foil
  • Olive oil
  • Salt and pepper to season

Instructions 

1. Lay the tomato slices out on the aluminum foil, and drizzle in olive oil. Season with salt and pepper. 

2. Roast the seasoned tomato slices in the oven at 450°F (232°C) for 30 minutes. 

3. Place the caramelized onions in a mixing bowl, adding the sharp cheddar, Havarti and goat's cheese. 

4. Add the chopped bacon slices to the mixing bowl, followed by the chopped fresh thyme and two tablespoons of the chopped fresh parsley. 

5. Season the mixture with the cayenne and the salt, then add the milk. Mix all the contents of the mixing bowl together until the mixture takes on an even consistency. 

6. Place half of the roasted tomatoes in a circular, oven dish and spread the mixture evenly on top of them. Place the other half of the tomatoes on top of the mixture.  

7. Roast in the oven at 425°F (218°C) for 30 minutes. 

8. Place the self-rising flour in another mixing bowl together with the heavy cream and two tablespoons of fresh parsley. 

9. Mix the ingredients together until it takes on a doughy consistency, then add salt and pepper to season. 

10. Separate the doughy mixture into six equally-sized disks. 

11. Take the roasted tomatoes and cheese mixture out of the oven, then place the dough disks on top of them. 

12. Bake in the oven for a further 10-15 minutes. 

13. Season to taste. 

14. Serve and enjoy!
