Mozzarella Fritters

Oh, the decadence! Heavy cheese mix fritters with a very savvy, even aristocratic twist: blue cheese crumbs! While they're listed as optional, we encourage you to crumble them into your cheese mix.

Mozzarella Fritters
Ingredients for fritters:
Goat Cheese - 14 oz.
Cream cheese - 4 oz. (softened)
Ricotta cheese - 16 oz. (whole milk is best)
Eggs - 2
All-Purpose flour - 2 tbsp.
Scallion - 3 (minced)
Salt and Pepper - as needed
Breadcrumbs - 1 1/2 cups
Vegetable oil - 1 quart (for frying)
Bacon - as needed (optional)
Blue cheese - as needed (optional)
Manchego cheese - as needed (optional)
Sun-dried tomatoes - as needed (optional)
Green olives - as needed (optional)
Method of preparing the fritters:
  1. Mince the scallions in a food processor. Add the goat cheese, cream cheese and ricotta and mix.
  2. Add the eggs and flour. Mix again. Season, and add any of the optional ingredients. If you do add any, make sure you chop or crumble them. The bacon should be thoroughly cooked.
  3. Chill the mixture for an hour.
  4. Shape into 1-inch balls and roll in breadcrumbs. Heat 2 inches of oil in a deep pan and fry the balls until golden brown.
Chef's Tip:
To complete the experience, we recommend a fruit dip: mix some mango, pineapple, pear or guava puree with vinegar, salt and sugar and finish with some juice of your choosing.
