Avocado Sauce

There's more to avocados than guacamole! Their creamy texture can be used for recipes across the board, from nutritious and hearty breakfasts, to scrumptious desserts. But have you ever thought to pair it with pasta? Instead of the classic pesto sauce, opt for this more nutritious version.

Ingredients for sauce:
Pasta - 1 pack (any kind you like)
Avocado - 2 (halved and pitted)
Garlic - 1 clove (minced)
Scallion - a handful (chopped)
Lemon juice - from 1 lemon
Olive oil - 1/4 cup
Salt and Pepper - as needed
Parsley - 1/4 cup leaves (chopped)
Parmesan cheese - for garnish
Avocado Stuffed Burger

Avocados are high in healthy fats, are a good source of fiber, pack a vitamin and mineral-laden punch, and research has also shown that consuming avocados might also help with cancer prevention. This recipe will add some good fats to your patty mix.

Ingredients for burgers:
Ground beef - 2 Ibs.
Avocado - 2
Sun-dried tomatoes - 1 cup (chopped)
Lemon juice - from 1/2 lemon
Lemon zest - from 1 lemon
Sea salt - 2 tsp. (divided)
Bacon fat - optional
Charred Corn and Avocado Pizza

To ensure you're selecting an avocado that is perfectly green and creamy on the inside, peel back the stem and see if it's green underneath. If it is, the avocado is perfect. If you can't peel it, it's not ripe yet, and if it's brown- it's overripe. 

This recipe uses Cojita cheese. This is a salty, crumbly, Mexican cow milk cheese. Feta cheese will do as well.

Ingredients for pizza:
Pizza dough - 16 oz.
Olive oil - 1 tbsp.
Pepper Jack cheese - 2 cups (shredded)
Corn - 1 cob
Poblano chili pepper - 1 (roasted)
Cilantro - 1/3 cup (chopped)
Avocado - 2 (peeled, pitted and sliced)
Cojita cheese - 1/3 cup (shredded)
Lime juice - as needed
Tabasco sauce - as needed (optional)
Avocado Grilled Cheese Sandwich

Ingredients for sandwich:
Bread - 2 slices
Pesto - 2-3 tbsp.
Mozzarella - 2 slices
Avocado - 1/4 (sliced)
Goat Cheese - 2 tbsp. (crumbled)
Baby spinach - a handful
Olive oil - as needed
Mushroom Avocado Pesto

Hard to say what makes this recipe so good. Is it the cheese? The avocado? Or maybe it's the mushrooms, so supple and full of flavor they could easily be mistaken for a steak.

Pine nuts - 2 tbsp. (toasted)
Parmesan cheese - 1/3 cup (grated)
Garlic - 3 cloves
Olive oil - as needed

Avocado - 1
Queso fresco - 1/4 cup (crumbled)
Avocado Chocolate Chip Cookies

Why add avocado to cookies, of all things? Why, for the protein punch, of course! But not only will it amp up the nutritional value of a simple chocolate chip cookie, it will also enhance the texture and make it creamy and smooth.

Avocado - 1 (peeled)
Unsalted butter - 1 stick (softened)
Dark brown sugar - 1 1/2 cups (room temp.)
Eggs - 2
Vanilla Extract - 2 tsp.
Baking soda - 1 tsp.
Salt - 1 tsp.
Baking powder - 1/2 tsp.
Rolled Oats - 1 1/2 cups
Chocolate chips - 1 3/4 cups
