Cashew and Chickpeas Vegetable Soup

Here is a freezer-friendly soup for ya. This soup is nourishing, healthy and filling. The spice mix you'll be preparing in this recipe will probably last you for other recipes as well, so we recommend preparing a glass jar in advance for all this spicy goodness.

Ingredients for spice mix:
Smoked paprika - 2 tbsp.
Garlic powder - 1 tbsp.
Oregano - 1 tbsp.
Onion powder - 1 tbsp.
Basil - 1 tbsp.
Dried Thyme - 2 tsp.
Ground black pepper - 1 1/2 tsp.
Salt - 1 1/2 tsp.
White pepper - 1 tsp.
Cayenne pepper - 1 tsp.
Ingredients for soup:
Cashews - 3/4 cup (soaked)
Vegetable broth - 6 cups
Olive oil - 1 tbsp.
Garlic - 3 cloves (minced)
Onions - 1 (diced)
Carrot - 3 (peeled and chopped)
Red bell pepper - 1 (chopped)
Sweet potato - 1 1/2 cups (peeled and chopped)
Canned tomatoes - 1 28 oz. can
Salt and Pepper - as needed
Spinach - 2 cups (baby leaves)
Canned chickpeas (garbanzo beans) - 1 (15 oz.) can (drained and rinsed)
Celery - 2 stalks

We think you'll love how you can just eat this whole dish with a spoon. Simply scoop up some chickpeas (garbanzo beans) with the soft sweet potatoes for a comforting bite full of flavor and fiber. Ingredients for sauce:
Hummus - 1/4 cup
Lemon juice - from 1/2 a lemon
Dill - 1 tsp.
Garlic - 3 cloves (minced)
Almond milk - as needed (to thin the mixture)
Ingredients for dish:
Canned chickpeas (garbanzo beans) - 1 (15 oz.) can (drained and rinsed)
Ground cumin - 1/2 tsp.
Ground coriander - 1/2 tsp.
Ground cinnamon - 1/2 tsp.
Paprika - 1/2 tsp.
Salt - a pinch
Olive oil - 1/2 tbsp.
Coconut Shrimp With Zucchini Pasta

Coconut water - 1 cup

Lime juice - from 1 lime

Bean and Cauliflower Risotto

A mouthwatering vegan recipe you can eat for breakfast, dinner and lunch! It will go perfect on its own, as a side dish or on bread. Perfect for a diabetic diet as well. You can swap the capers with any pickled vegetable you like, and if you're short on dried tomatoes, fresh ones will do just as well.  Just make sure you don't skip on toasting the pine nuts, as this will really add a kick of deep warm flavor!
